Discover Sabio Four Course

We'll admit up front that we are Sabio groupies. We have never had a bad experience or a dish we would not revisit. We always start with a dozen oysters and a glass of sparkling wine. We frequently put ourselves in Chef Hogan's hands with Discover Sabio and let him choose the dishes for us. The four course meal we had this week included potato & leek soup, maple glazed pork belly, oyster mushroom raviolis on a bed of sliced duck, and a decant chocolate moose type desert. We didn't leave a scrap of anything on our dishes, but went home full and satisfied. The last two courses are not on the menu, but should be. Everything was fresh and the presentations are thoughtful. Wish we could upload the photos for this review. The wait staff is professional and helpful. We had cocktails on this visit. We enjoyed a dirty cougar and an old fashion. We asked our waiter to pair the beverages with the courses since we didn't know the dishes to expect. Ryan did a wonderful job of mixing a bourbon drink (not on the menu) with an allspice liqueur to pair with the last two courses. We are looking forward to our next visit.

Chef's Ten Course Tasting Menu

My boyfriend and I enjoyed the Chef's Ten Course Tasting Menu with beverage pairing on more than one occasion! After going to Sabio for our first date, we've made a tradition of the tasting menu every year for our anniversary. It is absolutely phenomenal. Each time we called ahead to reserve a time and provide some food preferences, but the menu was a complete surprise! For example, we told Sabio we didn't enjoy shellfish, seafood, or lamb (no allergies, just preference). But I'm sure you could request the menu in advance if you're concerned. The chef is outstanding, every dish that comes out is better than the last! And with ten courses, you're telling yourself "I'm sure there will be at least one that isn't my favorite," but it never happens! My favorite items across the menus were Oxtail Empanadas, Semolina Gnocchi, every iteration of Pork Belly (maple, pomegranate), and the Butternut Squash soup. The pours on the beverage pairings are also very generous. Sabio as a whole is extremely accommodating. The second time we went for the tasting menu, our reservation was somehow misplaced (which didn't look good for us, as the tasting menu must be reserved 24 hours in advance). However, Sabio still managed to accommodate and the menu was as good (if not better!) than the first time. At the end of the meal, the Chef came out to thank us. We also got a printed menu to take home each time to remember the experience. It even had our names on it, with a "Happy Anniversary!" Truly a night to remember.

$1 West Coast Oysters on the Half Shell

First of all this is my favorite restaurant ever so I have literally eaten everything in the menu for years. The service is always amazing and Eian always talks me into eating, drinking, and buying everything because he's the best!

Great oysters for an awesome happy hour deal! The pumpkin donuts were also delicious and I don't even like pumpkin! Can't wait to come back when we have more time to dig into the menu.
